4. Lemon Juice
Lemons are one of nature’s cleansing fruits. The rind of lemon contains most of the polyphenol limonoids that gives this citrus their potent antiseptic properties. Using the juice alone means that you’ll have significantly fewer polyphenols in your hummus. Even though the rind is nutritious, we don’t think it’s a wise idea to add the zest to your recipe, as it will turn out bitter.
While you may miss out on the polyphenols, you get a significant serving of vitamin C by adding the juice of half a lemon to your recipe, and a burst of carbs that improve energy levels.
We prefer to use freshly squeezed lemon juice for our hummus. Store-bought versions are okay to use in this recipe, but you’ll get more nutrition out of using fresh fruit. Squeeze the juice from one lemon and add it to your food processor to give your hummus a tangy, citrus edge that’s absolutely delicious.
