2 Leave it to Soak
The whole reason that this bread is so healthy and so different, is that it uses sprouted grains. For that reason then, it’s kind of important that you actually remember to let your grains sprout before you put them in! This natural process will allow your grains to germinate, thereby locking in more of those important nutrients and helping to break down the parts of the grain that are hard for your body to digest.
If you get all this right, then the grains will have more protein and more fiber as a result, and you’ll find they are much healthier. The key to success then, as with so many aspects of baking and cooking as a whole, is patience. Don’t be in a rush to get your bread out and start eating it – provide the necessary time that you need for the sprouting to occur and wait until it looks good and stringy!
