4. Delicious Blueberry Cobbler
What you need:
- ½ cup of sugar
- Tbsp of cornstarch
- Tsp of lemon juice
- 4 cups of blueberries
- 1 cup of flour
- 2 tbsp sugar
- 1 and ½ tsp of baking powder
- ½ tsp of salt
- 3 tbsp of butter
- ½ cup of milk
To make:
Preheat the oven to 400 degrees F. In a saucepan, combine ½ cup sugar, a tbsp of cornstarch, a tsp of lemon juice, and four cups of blueberries. If the berries are very tart you may need to add more sugar. Stir over medium heat until it is boiling and then thicken for another minute. Pour the mixture into a prepared two-quart baking dish.
To make the topping you will mix a cup of flour, 2 tbsp sugar, 1 ½ tsp baking powder, ½ tsp of salt. Mix together and then cut in 3 tbsp of butter. Mix until it is crumbly. Add in half a cup of milk. Mix until combined. Place the mixture over the top of the blueberries by making six to eight large dabs of the dough. Bake until the top turns golden brown, about 30 minutes.
