2. Grilled Halibut
Halibut has a thick, firm flesh that tastes delicious. This deepwater fish comes from the northern regions of the Atlantic seaboard in the United States. It’s a reasonably common fish that grows to an enormous size, with some specimens weighing over 200-pounds.
We like grilling halibut because of its thick flesh, it does well on the grill without burning, and we think it’s very similar to cooking a steak.
INGREDIENTS
1-lb. Halibut steak – trimmed.
2-tablespoons grass-fed butter.
2-tablespoons brown sugar.
2-cloves minced garlic.
1-tablespoon pure lemon juice.
2-teaspoons soy sauce.
½-teaspoon cracked black pepper.
METHOD
Preheat the grill to medium-high. Place a small saucepan over medium heat and add the butter. After it melts, add the garlic, brown sugar, soy sauce, lemon juice, and pepper – stir until everything combines and the sugar dissolves.
Rub the grill down with a half an onion and lightly brush it with olive oil. Brush the fish with the sauce and add it to the grill. Baste the fish every minute to keep the skin from burning. Grill for 5-minutes on either side until cooked through completely. Plate and serve warm with sweet potato chips.
