5. Cook Times
One of the best things about cornish hens is that they cook much faster than a standard chicken. The small size makes it much easier to achieve that yummy crispy skin along with properly cooked meat at the same time.
Typically, a cornish hen can be cooked in just 20 to 25 minutes when roasted in a 450-degree oven. It is important to make sure that the temperature of the inner breast reaches 155 degrees F. When you take the chicken out of the oven you should tent it using foil and then let it rest. It should rest for about ten minutes or so. Tenting the bird and letting it rest will allow the temperature of it to rise about another five or ten degrees or so. This is important as you always want to make sure that any chicken that you are going to serve is up to temperature.
