4. Tomato and Mozzarella Caesar Salad
Usually, the only cheese used in Caesar salad is parmesan cheese, but if you are feeling adventurous, you can combine the creamy, tangy flavors of a mozzarella and tomato salad with the bold flavor of Caesar salad.
3 cloves garlic, peeled and cut
5 anchovy fillets, cut fine
1 egg yolk 4 teaspoon of grated Parmesan cheese
1/2 teaspoon of dijon mustard
1/2 teaspoon Worcestershire sauce
2 tablespoon lemon juice
Kosher Salt
Coarse ground pepper
⅓ cup olive oil
3 cups stale bread, cubed
2 heads romaine lettuce torn
1 cup halved cherry tomatoes
1 cup mozzarella cubes or balls
In a bowl, place washed and torn Romaine lettuce leaves. Toss in the cup of tomato halves and mozzarella cubes or balls. In another bowl, mash minced cloves of garlic with anchovies. Add all liquid ingredients. With some olive oil, brown bread cubes. Drain and put in the salad, top with
dressing and toss. Add parmesan cheese.
