5. Avocado Caesar Salad
The combination of mayonnaise, parmesan cheese, oil, and avocado make this Caesar salad creamier than many other varieties.
3 cloves garlic, peeled and cut
5 anchovy fillets, cut fine
⅓ cup mayonnaise
3 tablespoons of grated Parmesan cheese
1/2 teaspoon of dijon mustard
1/2 teaspoon Worcestershire sauce
2 tablespoon lemon juice
Kosher Salt
Coarse ground pepper
⅓ cup olive oil or vegetable oil
3 cups stale bread, cubed
2 heads romaine lettuce torn
1 ½ cups of cubed avocado pieces
Mash together minced garlic and anchovy fillets into a paste. Mix mustard, Worcestershire sauce, lemon juice, oil, salt, pepper and half of the parmesan cheese into the paste to form a thick sauce. Sautee the cubes of stale bread in more olive and oil until brown. Place the drained
bread pieces onto the Romaine lettuce, add avocado, add the sauce, top with parmesan cheese and toss.
