4. Flour
Flour provides the structure and the breading for your Chicken Parmesan. Which type of flour you use is up to you. Traditional all-purpose flour would taste the best as it contains proteins that, when mixed together, create gluten. It is this elastic gluten and the protein content of the flour that affects the strength of the dough.
When baking something like Chicken Parmesan, you will want a flour that has a high protein content. Traditional all-purpose flour has 10-12% protein. If you want to make your Chicken Parmesan gluten-free, we recommend using Bob’s Red Mill Gluten-Free All-Purpose Baking Flour.
Specifically formulated for baking, it is a blend of garbanzo bean flour, potato starch, whole grain sorghum flour, tapioca flour, and fava bean flour. It can easily replace all-purpose flours in most recipes. You can also choose other forms of flour alternatives, but not all of them can be used as replacements for every recipe.
