1. Instant Pot Teriyaki Rice with Chicken and Vegetables
The ideal weeknight meal – it’s easy to put together, and ready in 30-minutes. Our recipe for teriyaki rice with chicken and veggies will have your taste buds jumping for joy!
INGREDIENTS –
Teriyaki Sauce
1/3-cup soy sauce.
¼-cup apple cider vinegar.
¼-cup raw honey.
1-½-tablespoon dry sherry.
1-teaspoon corn starch.
3-tablespoons purified water.
INGREDIENTS – Rice and Chicken
1-½-tablespoons sesame oil.
½-lb. Boneless skinless chicken breast – cubed.
2-cloves minced garlic.
½-teaspoon grated or minced ginger.
½-cup chopped red bell peppers.
½-cup shredded carrots.
1-½-cups jasmine rice washed, rinsed and drained.
1-cup purified water.
½-cup broccoli florets.
½-cup edamame beans.
Sesame seeds for garnish.
Green onions – chopped for garnish.
Kosher salt and black pepper to taste.
METHOD
Press the sauté button on the Instant Pot, and let it heat for a few minutes.
Whisk together the vinegar, soy sauce, mirin, and honey.
Heat olive oil in the Instant Pot and add the chicken – season with salt and pepper. Sauté for 2- minutes until slightly brown. Add garlic and ginger – cook till fragrant. Add the sauce and the rice to the pot, and seal.
Press the “pressure cook” button and set for 3-minutes. Remove the lid and press the “sauté” button. Add the edamame, broccoli, bell peppers, and carrots. Cook until veggies are tender. Sprinkle with green onion and sesame seeds – serve warm.
