5. Shepard’s Pie with Pulled Pork
Here’s our take on shepherd’s pie with pulled pork instead of ground beef. Give it a try, and you’ll never go back to the original recipe!
INGREDIENTS – MASHED POTATOES
2-lbs. Red potatoes.
½-pack ranch seasoning mix.
2/3-cup sour cream.
INGREDIENTS – FILLING
1-lb. Pulled pork.
1-bottle BBQ sauce.
1-can creamed corn.
1-cup shredded cheddar cheese.
1-bunch scallions – diced.
METHOD
Preheat oven to 400F.
Peel and cube the potatoes. Place a large saucepan over high heat and boil the potatoes in water for 10-minutes until fork tender. Remove from the pan and mash the potatoes with the ranch seasoning and sour cream until all lumps are gone.
Toss the pulled pork with the BBQ sauce and add to a large casserole dish. Top with mashed potatoes and shredded cheese. Bake in the oven for 15-minutes until the cheese melts and starts to bubble.
Remove from the oven and let cool for 10-minutes before serving with fresh vegetables or salad on the side.
