4. Pineapple Pulled Pork
Let’s get tropical with pineapple pulled pork. Try this recipe on sliders; it’s a fantastic flavor explosion.
INGREDIENTS
4-lbs. Boneless pork shoulder.
1-cup BBQ sauce.
½-cup brown sugar.
Juice of 3-limes – divided.
2-tablespoons garlic powder.
2-tablespoons chili powder.
2-teaspoon cayenne pepper.
½-head cabbage – shredded.
1-whole fresh pineapple – diced.
2-tablespoons extra-virgin olive oil.
½-red onion – sliced.
2-green onions – sliced.
1-teaspoon red pepper flakes.
8-corn tortillas.
METHOD
In a medium mixing bowl, add the BBQ sauce, sugar, lime juice, chili powder, garlic powder, and cayenne – whisk to combine. Rub the pork with the spices and add to a large slow-cooker.
Cook on low heat for 8 to 9-hours, then remove the pork and shred using two forks.
In a separate mixing bowl, combine the pineapple, cabbage, olive oil, and remaining lime juice, along with the onions, and red pepper flakes.
Fill the tortillas with pulled pork, top with slaw, fold and serve.
