5. Simple Strawberry Shortcake
Sweet, superb, and simple to make – shortbread is a tasty dessert that’s excellent when served with a cup of hot chocolate. With winter around the corner, mix up a batch of shortbread and let the family enjoy them on a cold winter evening.
INGREDIENTS – BASE
1-large free-range egg.
2-cups all-purpose white flour.
8-tablespoons grass-fed butter.
5-tablespoons confectioners’ sugar.
1-tablespoon baking powder.
½-cup whole raw milk.
½-teaspoon crushed Himalayan pink salt.
½ cup whole milk
INGREDIENTS – TOPPING
6-tablespoons confectioners’ sugar.
2-cups whipped cream.
8-cups strawberries.
METHOD
Preheat oven to 375F. In a medium mixing bowl combine the flour with 3-tablespoons of sugar, the salt, and the baking powder. Mix in the butter and add the egg. Beat the egg before you add it to the mix. Then add the milk and whisk everything together until blended. Prepare the dough into six square blocks, brush with egg wash and place them on a baking tray lined with wax paper. Bake in the oven for 20 to 25-minutes until the dough rises and turns golden brown.
While the shortcake bakes, make the topping. Add the strawberries to a bowl and crush using the back of a spoon. Add the sugar and let the mixture macerate for 15-minutes while the shortcakes finish.
When the shortcakes finish baking, remove them from the oven, cut each biscuit in half and leave to cool for 20-minutes. Top with the strawberries and add fresh whipped cream before serving.
