5 Add and Mix the Wet Ingredients
Now you’re going to add the wet ingredients. That means adding the water, the yogurt, and the olive oil and then mixing together with a spoon. The dough will begin to come together, at which point you should start to knead it in the bowl. Stop when you have a satisfyingly springy dough.
Cover the bowl and then leave it to prove for about an hour. You should place this somewhere that is warm and moist, such as a dark cupboard. Some people will choose to prove in the oven with the temperature.
Either way, don’t be tempted to remove the cover in order to peak! If necessary, you can always use a transparent bowl so that you can measure the progress.
Keep in mind though that these are flatter breads and you are not expecting them to rise a large amount.
