5. Gnocchi with a Mushroom Cream Sauce
What you need:
- A package of gnocchi
- 3 cups of chicken stock
- 1 oz of clarified butter
- 1 oz of flour
- Mushrooms of your choice
To make:
This dish starts by making a chicken veloute, which is one of the 5 mother sauces. To make you will heat the chicken stock in a pan over medium heat. Lower the heat to keep the stock hot. In a separate pan melt the butter over medium heat until frothy. Stir the flour into the butter a bit at a time until it is all incorporated.
Add the chicken stock to the flour mixture, stir rapidly to remove lumps. Simmer for about 30 minutes. In a separate skillet, saute mushrooms in a bit of butter or oil. Add the mushrooms to the chicken stock mixture. Cook the gnocchi according to the package directions. Drain and place in a bowl. Pour the mushroom cream sauce over the top and serve.
