4. Gnocchi with Pesto
What you need:
- 2 cups of fresh basil
- 3 cloves of garlic
- ½ cup of walnuts or pine nuts
- ¾ cup grated hard cheese such as pecorino-romano or Parmigiano-Reggiano
- ½ cup of olive oil
- Salt to taste
- Package of gnocchi
To make:
Add all of the ingredients except for the oil and the cheese to a food processor. Pulse until the pesto is well blended and resembles a slightly coarse paste. Transfer the mixture to a bowl and add in the cheeses and the oil. Stir until it is well combined. Make the gnocchi according to the package directions.
Remove the gnocchi from the boiling water when cooked and add them to the pesto sauce. Mix well. If you need to thin out the pesto a bit you can add some of the pasta water a spoonful at a time until the pesto becomes the desired consistency.
