4. Sweet Potato Soup
If leaks aren’t your thing, try out this recipe for sweet potato soup. This low-carb meal is ideal for people watching their waistline. This recipe is so easy to make, it’s going to be frightening that you didn’t think of it sooner.
INGREDIENTS
5-cups chicken bone broth.
3-large sweet potatoes, cubed.
1-½-cups coconut milk.
2-stalks celery, chopped.
1-onion, sliced.
2-cloves minced garlic.
¼-cup chopped walnuts.
Cracked black pepper and crushed Himalayan pink salt.
Chopped parsley for garnish.
METHOD
Take a slow cooker and throw in all the ingredients, holding the coconut milk on the side. Turn the slow cooker onto high and leave it to do its thing for the next 4-hours. After cooking, remove from the heat and let the soup cool slightly before blending all the ingredients with an immersion blender.
Stir in the coconut milk and let the soup cook on low heat for another 30-minutes. Garnish with parsley and crushed walnuts before serving.
