8. Mediterranean-style pork orzo
This pork dish is light, yet filling, and bursting with flavor. For the ingredients, you’ll need pork tenderloin, olive oil, ground black pepper, water, orzo, salt, fresh baby spinach leaves, halved grape tomatoes, and feta cheese. To make the dish, rub the pork tenderloin with pepper and cut into cubes. Heat the oil in a large nonstick skillet on medium-high heat.
Add in the pork, stir, and cook until it’s no longer pink. In a Dutch oven, bring the water to a boil, stir in the salt and orzo, and cook until the orzo is tender. Stir in the spinach, cook until it’s wilted, and drain. Add in the tomatoes to the pork and heat through. Stir in the orzo mixture and the feta cheese. You can either serve this dish hot or if you prefer (and if you have more time), serve it chilled.
