14. Brunch Burritos
Skip the sandwich for lunch and try this recipe for brunch burritos. It’s not breakfast, and it’s not lunch – but it’s a tasty meal that you can enjoy when you’re in a hurry.
INGREDIENTS
10-flour tortillas – warmed.
18-large free-range eggs – beaten.
1-lb. Pork sausage – casings removed.
½-pound bacon strips – cooked and chopped.
2-cups shredded hash browns.
1-can condensed cheddar cheese soup.
2-cups shredded cheddar cheese.
1-can diced green chilies.
1-onion – chopped.
1-teaspoon garlic powder.
½-teaspoon black pepper.
Jalapeno peppers and salsa for serving.
METHOD
Place a skillet over medium-high heat and add some oil. When the oil starts to shimmer, add the sausage and cook for 6 to 8-minutes until no longer pink. Remove the sausage from the pan and set aside.
In a mixing bowl, whisk together the eggs until light and fluffy.
In a separate mixing bowl, add the rest of the ingredients and stir to combine. Add to the egg mixture and spoon onto the tortillas. Top with sausage meat and wrap the tortilla into a burrito. Serve with guacamole, salsa, and sour cream.
