3. Peanut Butter and Banana Granola Bars
Forget about trail mix, make yourself a batch of these banana and peanut butter granola bars for your next hiking trip.
INGREDIENTS
1-cup organic smooth peanut butter.
2-cups rolled oats.
1-tablespoon raw honey.
3-ripe bananas.
½-cup dried fruit.
1-cup nuts or seeds.
½-teaspoon ground cinnamon.
½-teaspoon vanilla extract.
A pinch of Himalayan pink salt to taste
METHOD
Preheat the oven to 375F. Spread the nuts on a baking tray and dust with cinnamon. Place the dish in the oven for 5-minutes to toast the nuts, then remove and chop roughly.
In a separate mixing bowl, mash the bananas using the back of a fork. Place a saucepan over low-medium heat and add the bananas along with the vanilla, peanut butter, and honey – stir to combine. Remove from the heat and scoop the mixture into a medium-sized mixing bowl Add the nuts and mix well.
Line an 11×13-inch baking tin with wax paper and pour in the mixture. Bake in the oven for 25-minutes, remove and let cool for 10-minutes before cutting the granola bars into squares. Store in an airtight container in the fridge for up to a week.
