4. Peanut Butter Choc-Chip Biscotti
The perfect breakfast snack to accompany a cup of coffee or tea. This biscotti is light and fluffy with the flavor of chocolate and peanut butter providing a smooth and sweet taste.
INGREDIENTS
2-½-cups all-purpose flour.
3-large free-range eggs.
½-cup organic smooth peanut butter.
10-tablespoons grass-fed butter.
2-¾-teaspoon baking powder.
1-¼-cup brown sugar.
½-cup dark choc chips.
½-cup milk choc chips.
½-cup cocoa nibs.
2-teaspoon vanilla extract.
METHOD
Preheat the oven to 375F and line a baking tray with wax paper – set aside.
Place a saucepan over low heat and melt the butter. In a large mixing bowl, add the baking powder, flour, and salt – whisk to combine. Beat in the eggs and gradually add the butter, vanilla, and sugar – keep beating. Add the peanut butter and mix well.
Add the dry ingredients to the wet ingredients and mix until everything absorbs into a dough-like mixture. Fold in the peanuts and the choc chips.
Pour the mixture out onto the baking sheet and shape it into two logs. Bake in the oven for 10-minutes until golden brown.
Divide the dough evenly into thirds, and put each portion in the center of a baking sheet. Shape the dough into logs about 2 inches wide and 15 inches long. Bake until set and brown around the edges, about 25-30 minutes. Cool logs on baking sheets for about 10 minutes.
Transfer the logs to a cutting board, let cool for a few minutes and slice into 1-inch think pieces. Store in an airtight container at room temperature for up to 5-days.
