4. Autolyze
Once your flour, water, and any other ingredients have been well mixed, you can use the autolyze method to develop the dough further. The autolyze method lets time do the work for you. All you have to do is cover the dough and then let it sit at room temperature.
You might choose to let it sit for 20 minutes, an hour, or even longer. While it sits there, the water and flour mix together and collaborate to build a gluten network. This will make it much easier for you to handle.
This autolyzing step is one that is optional, but in the long run, it’ll make it easier for you going forward, and watching the dough work its magic is always fun. If you’re in a rush, feel free to skip this step, but we highly suggest that you try it out when you have some free time because it is truly unique experience.
