2. Bacon Bruschetta
What you need:
4 tbsp of olive oil
A large tomato chopped up
3 tbsp chopped basil
Tbsp capers
Tbsp of chopped olives
Salt and pepper
5 strips of bacon, cooked crispy and then crumbled
Olive oil for brushing
Sliced baguette
How to make:
In a bowl, mix the olive oil, tomato, basil, capers, and chopped olives. Season the mixture with some salt and pepper to taste. Let the mixture sit together. The longer that you let it sit, the more the flavors will meld together and provide more flavor. Slice the bread into one inch thick pieces. Brush the bread with some olive oil and then broil until toasted. Fry the bacon until it is crispy. Let cool and then crumble. Top the toasted bread with the tomato mixture. Sprinkle bacon over the top of it. Serve the warmed bread as an appetizer before your meal.
