5. Avocado Bruschetta
What you need:
For the Lime dressing:
½ of a lime rind grated
Juice from half of a lime
A french shallot finely chopped
Tsp chili flakes
Tbsp olive oil
For the bruschetta:
10 pieces of bruschetta bread
Olive oil
250 grams of halloumi, sliced
4 ripe avocados
Juice from half a lime
Freshly chopped coriander leaves
To make:
Add all of the dressing ingredients in a bowl and whisk together. Set aside. Drizzle olive oil on each side of the bread and then place them onto a griddle pan. When both sides become crispy and brown set them on a plat.
Grill the halloumi until golden brown on each side. Mash the avocados with some lime juice. Smear the mashed avocado onto the bread. Cut the halloumi into bite-sized chunks and put them on top of the avocado spread. Top with the dressing and the chopped coriander leaves.
