3. Grilled Chicken with Aji Sauce
What you need:
⅓ cup of soy sauce
2 tbsp lime juice
5 cloves smashed the garlic
2 tsp cumin
1 tsp paprika
½ tsp oregano
½ tsp black pepper
1 tbsp plain greek yogurt
1 pound whole chicken, quartered
For the sauce:
2 jalapenos chopped roughly
A cup of cilantro leaves and stems
One garlic clove smashed
Tsp apple cider vinegar
Tbsp fresh lime juice
¼ cup mayonnaise
¼ cup plain Greek yogurt
Salt
To Make:
Add the soy sauce, lime juice, cumin, garlic, paprika, pepper, and yogurt to a blender and puree. Place the chicken inside a large plastic bag and pour the pureed mixture over it. Close the bag and place it in the refrigerator for 8 to 24 hours. Heat up the grill and oil the grates. Drain the chicken and pat it dry. Place the chicken on the grill, put the lid down and cook for 15 minutes. Turn the chicken over and cook for 15 more minutes, or until the chicken has reached an internal temperature of 165 degrees. Let cool and then carve. To make the sauce, put all of the ingredients into a blender and pulse until the sauce is pureed. Serve with the chicken.
