3. Pumpkin and Pecan Muffins with a Cinnamon Sugar Topping
What you need:
- 1 and ¾ cups flour
- A tsp of baking powder
- ½ tsp of baking soda
- ½ tsp of sea salt
- A cup of white sugar
- ½ cup brown sugar
- ½ cup of chopped pecans
- ¼ tsp of ground nutmeg
- 1 and ½ tsp of cinnamon
- 2 large eggs
- A tsp of vanilla extract
- A cup of pumpkin puree
- ½ cup of vegetable or canola oil
For the topping:
- ½ cup of chopped pecans
- ⅔ cup of brown sugar
- A tsp of cinnamon
- ⅓ cup of softened butter
- ⅓ cup of flour
To make:
Preheat your oven to 350 degrees F. Line a muffin tin with paper muffin liners. In a large bowl mix together the dry ingredients. In another bowl, whisk the eggs and then add in the rest of the wet ingredients. Add the liquid to the dry ingredients and mix well. Spoon the mixture into the muffin tin. Prepare the topping by mixing all of the dry ingredients together and then adding in the softened butter. Sprinkle this mixture on top of the muffins and then bake for 25 to 30 minutes or until a toothpick inserted into one comes out clean.
