4. Easy Healthy Pumpkin Muffins
What you need:
- 1 and ½ cups of whole wheat flour
- 1 tsp of baking soda
- 1 tsp of salt
- ½ tsp of ground cinnamon
- ¼ tsp of grated nutmeg
- 1 cup of natural sweetener
- ½ cup of canola oil
- 2 large eggs
- ½ can of pumpkin puree
- ½ cup of unsweetened applesauce
To make:
First, preheat your oven to 375 degrees F. Next, in a large bowl mix together the whole wheat flour, salt, baking soda, cinnamon, and nutmeg. Set the dry ingredients aside. In another bowl, mix the oil, sweetener, eggs, applesauce, and pumpkin puree. Add the dry ingredients into this mixture and mix together until the flour is absorbed. Place the mix in prepared muffin tins. Bake for 20 to 25 minutes. They are done when a toothpick inserted into one of the muffins comes out clean. Allow to cool for ten minutes before serving.
