2. Tasty Pumpkin Muffins
What you need:
- ½ cup of canola oil
- ½ cup of brown sugar
- ⅓ cup of granulated sugar
- ½ tsp of vanilla extract
- 2 large eggs
- A cup of pumpkin puree
- ¼ cup of milk
- 1 and ¾ cup of flour
- 1 tbsp of pumpkin pie spice
- A tsp of baking powder
- ½ tsp of baking soda
- ½ tsp of salt
- ½ cup of chopped walnuts
To make:
To begin, preheat your oven to 425 degrees F. Next, line 10 of the 12 cavities of a muffin tray with liners. Place the sugar, brown sugar, canola oil, eggs, pumpkin puree, vanilla, and milk in a large bowl. Whisk the mixture until it is fully combined and smooth. Add the dry ingredients one at a time to the mixing bowl. Continue to whisk until the mixture is combined. Make sure that you do not over mix. Spoon the mixture into the prepared muffin tins. Place the pan in the oven and bake for five minutes at 425 degrees F. After 5 minutes, reduce the temperature to 350 degrees F and bake for another 15 minutes or until a toothpick comes out clean.
