4. Fun Key Lime Pie
For the crust:
- ¾ cup of graham cracker crumbs
- ½ cup of crushed corn flakes
- 2 tbsp of sugar
- 5 tbsp melted butter
For the filling:
- 14 ounce can sweetened condensed milk
- 4 egg yolks
- ½ cup of key lime juice
- ½ tbs of key lime zest
For the topping:
- A cup of heavy cream
- 2 tbsp of confectioners sugar
To make:
Combine the ingredients for the crust and then press into a greased 9-inch pie plate. Bake at 350 degrees for about ten minutes. Remove from the oven and let cool. In a large bowl, mix the milk and the egg yolks. Add in the key lime juice and the key lime zest and mix well.
Pour into the prepared pie crust. Bake at 325 degrees for 15 minutes. Remove from heat, allow to cool, and then place in the fridge. Whip the cream and the sugar together until stiff. Serve pie with a dollop of the whipped cream.
