2. Kale Guacamole
If you are looking to make your guacamole even healthier, try this great version of this tasty dip that adds in the superfood kale. Here is what you need:
- 5 leaves of kale finely chopped
- 4 medium-sized avocados, pitted
- Juice of a lime and a lemon
- 3 cloves of minced garlic
- ½ cup of finely chopped red onion
- A jalapeno, chopped finely
- ¾ cup of chopped cilantro
- ½ cup chopped Roma tomato
- ½ tsp sea salt
To make:
First, prepare all of the vegetables by finely chopping them. One of the best ways to do this is to use a food processor. The food processor will make chopping the vegetables quite quick. However, if you do not have a food processor, simply chop everything by hand. To use a food processor, first, add in the garlic and pulse until it is minced. Next add in the cilantro, onion, and jalapeno and pulse until all is chopped. Next, add in the lime juice and avocado. Pulse until smooth and then transfer to a bowl. Chop the kale and add it to the mixture. Then add in the chopped tomato. If you are doing this all by hand, mix together all of the ingredients well. Serve with your favorite veggies or chips.
