5. Chocolate-Orange Cake
Before you go ahead and finish the entire cake, we have to warn you that this epic delight comes packed with calories. It’s the perfect dessert for a dinner party, with an exquisite chocolate-orange taste.
CAKE INGREDIENTS
1-3/4-cup cake flour.
1-cup brown sugar.
1-cup cocoa powder.
2-1/2-teaspoons baking soda.
3-large free-range egg whites.
1-cup full-cream buttermilk.
1-cup grass-fed butter.
2-tablespoons light olive oil.
½-teaspoon pink Himalayan salt.
4-oz full-fat cream cheese.
1-1/4-cup confectioners’ sugar.
½-cup orange juice.
2-tablespoons orange liqueur.
CAKE METHOD
Preheat oven to 350F. Grease a cake tin with grass-fed butter and wax paper. Take a medium mixing bowl and add sugar, baking soda, salt, and sifted cake flour. Take a separate bowl and add the egg whites, beat until peaks form. Stir in the buttermilk, butter, and oil then add to the flour mix. Whisk until smooth before adding to the cake tin.
Bake the cake for 40 to 45-minutes then transfer to cooling racks for 20-minutes before adding the frosting.
ICING METHOD
Beat together cream cheese, confectioners’ sugar, and ½-cup of cocoa powder in a medium mixing bowl. Take a saucepan and add orange juice over medium heat. Stir until 2/3-reduced. Add the orange sauce to the powder mix and stir until thick and sticky. Stir in the orange liqueur and pour over the cake while still warm. Sift some cocoa over the cake and serve with whipped cream.
