INGREDIENTS
5-large carrots spiralized into noodles.
2-tablespoons chopped cilantro.
½-cup chopped roasted cashews.
FOR THE SAUCE:
4-tablespoons raw coconut milk.
2-tablespoons organic natural smooth peanut butter.
2-cloves minced garlic.
¼-teaspoon cayenne pepper.
1-tablespoon fresh squeezed lime juice.
1-tablespoon minced ginger.
Crushed Himalayan pink salt for taste.
METHOD
Combine the sauce ingredients into a medium mixing bowl and stir until well-blended.
Place a skillet over medium heat. Fry garlic until golden brown. Pat the carrot pasta dry and flash fry in the pan for 1-minute to warm.
Place carrot pasta on a plate and top with the sauce. Garnish with chopped cilantro and cashews before serving.
