Cooking Time: 10 Minutes
Serves: 4
Ingredients:
- 2 large onions pre-prepared in thick rings
- 6 medium-sized eggs
- 2 cup flour
- 2 tablespoons salt
- 2 tablespoons black pepper
- Chopped red and green peppers
- Finely chopped chili peppers (with seeds)
- 4 cups of vegetable oil
Method:
1. In a zip lock bag, mix the flour with the seasoning. This is where you get to decide how hot the flavor will be.
2. Beat the eggs together and leave to one side.
3. Cook the chopped peppers (including the chili peppers) in a shallow pan on low heat.
4. Dip each thick cut ring in the eggs.
5. Use some tongs to dip each ring into zip lock bag with the flour and the seasoning. Alternatively, you could just throw them on in there and shake it up.
6. Fry each onion ring for 3 to 4 minutes in your skillet or fryer and allow them to rest straight after.
7. Pour the cooked pepper mixture over the rings and serve your delicious salt and pepper onion rings.
