5. Easy Peasy Ham, Pea and Lentil Soup
For a lot of people, providing a freshly cooked meal every evening can prove to be a challenge. Not just because of soaring food prices, but because of the constraints of time. With this in mind, here’s a recipe that ticks both boxes. The whole family will enjoy this soup and it won’t break the bank either, it’s a win, win situation.
Using frozen peas and processed ham to make a soup might seem like a crazy idea, but it really isn’t. Try it and see. Boil the peas so that they’re fully cooked and chop the ham into thin chunks. Add both of these ingredients to a thick broth of vegetable stock and bring it all back to the boil together.
You can either cook the lentils in this broth, or prepare them separately, it really doesn’t matter. If time is of the essence, why not just throw them in with everything else. It saves on cleaning the dishes too.
