4. Onion and Lentil Soup
Onions are the starting point for most home soup makers. It’s little surprise either, due to their versatility and value for money. Onions are so cheap to buy and really great to use in a soup. Finely chopped, sliced or dice is fine for this recipe, and once you’ve made your mind up where that’s concerned, simply sweat the onions at the base of a deep soup pan for around 20 minutes.
To the onions, add a small amount of boiled water and stock cubes, before raising the level of the water slowly, all the while ensuring that the thickness is maintained. In a shallow frying pan, fry some more onions until browned and then add these to the soup bowl.
Whilst the onion broth is simmering away, prepare the lentils by washing, boiling and softening them, before adding these to the soup pan as well. It might not be as famous as French Onion Soup, but we think this Onion and Lentil Soup rivals it, both in terms of taste and value for money.
