4. Greek Yogurt Donuts
Greek yogurt can be used as a healthy substitute for mayonnaise, or cream. It’s good for you and it helps make these donuts a healthier option. The Greek yogurt also makes them sweet and dense. They are perfect to enjoy with a cup of coffee or some milk.
Ingredients
- 1/2 cup flour
- 1/2 cup amaranth flour
- 1/4 cup coconut flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 3 tablespoons canola oil
- 2 eggs
- 4 tablespoons cane sugar
- 1/2 cup vanilla Greek yogurt
- 1/4 cup vanilla almond milk
- 3/4 cup blueberries
- 3 tablespoons lemon juice
- 2 tablespoons lemon zest
Directions
- Turn the over on 350 degrees and allow it to preheat.
- Prepare a donut pan with butter or grease and set it aside.
- Mix the eggs, oil, yogurt, and almond milk together in a large bowl.
- Mix the dry ingredients in a separate bowl.
- Add the dry ingredients to the wet ingredients and incorporate them.
- Add the lemon zest and blueberries.
- Add the batter to the donut pan.
- Bake to 10-12 minutes.
- Serve warm or slightly cool.
