Another interesting variation on coleslaw is to use a little bit of egg rather than the usual mayonnaise. In fact, you can use this combination to make a kind of egg benedict type combination, which is very close to the flavor of coleslaw to begin with, though a little bit sweeter.
You’re going to make this one by taking your basic coleslaw recipe, and then cracking an egg over the top, mixed with a little bit of oil and some vinegar. The result is a tangy, sweet, and filling combination that is much more interesting than your average coleslaw. The only issue is that this combination won’t keep quiet so well as other variations, so if you want to serve it the best way is to crack the egg just before dishing up.
Egg also has a ton of health benefits.
