3. Easy Shrimp Alfredo
What you need:
- 1 pound of linguine or alfredo pasta
- 2 tbsp of butter
- 1 ½ pounds of shrimp, cleaned and tails removed
- 2 tbsp butter
- A clove of crushed garlic
- 4 oz of cream cheese
- A cup of half and half
- A cup of shredded parmesan
- Salt, pepper, and nutmeg
- Parsley and additional parmesan to garnish
To make:
Bring a pot of water to a boil and cook the pasta according to package directions. Melt the butter in a saucepan over medium heat. Add in the garlic and cook for a minute. Add the cream cheese to the pan and cook until melted. Add in the parmesan and half and half. Bring to a simmer, stirring often. Cook until sauce thickens. Season with salt, pepper, and nutmeg to taste. While the sauce is cooking, melt 2 tbsp of butter in a skillet and cook the shrimp until they are a bright pink color. Mix the pasta, shrimp, and sauce together. Serve with a sprinkle of parsley and parmesan over the top.
