3. Tiger Prawn Risotto
This hearty rice dish is perfect for lunch or brunch.
Ingredients
- Olive oil
- Unsalted butter
- Shallot, minced
- Garlic, minced
- Arborio rice
- Cooking sake
- Japanese soy sauce
- White miso paste
- Homemade unsalted fish stock
- Tiger prawns
- Baking soda
- Kosher salt
- Parmesan cheese
- Green onions
- Parmesan cheese
Instructions
- Rinse the shrimp and dry them well with paper towels.
- Add the shrimp, baking soda and salt to a bowl and mix well. Set it in the refrigerator to brine the shrimp.
- Heat up the pressure cooker.
- In a pot, add the olive oil, butter, shallots, grits, and brined shrimp. Set the shrimp aside to cool
- Add the rice to the pressure cooker along with the soy sauce, yellow miso paste, and sake.
- Cook the rice in the pressure cooking and add the fish stock.
- Cook for five more minutes.
- Add the shrimps and shallots to the rice and stir gently.
- Top with parmesan cheese before serving.
