4. Mushroom Rissoto
If you love mushrooms, you will love this rich and creamy risotto recipe.
Ingredients
- Chicken stock
- dried porcini mushrooms (optional)
- mixed mushrooms
- Extra-virgin olive oil
- Unsalted butter
- Kosher salt
- Freshly ground black pepper
- Yellow onion
- Garlic
- Risotto rice
- Soy sauce
- Light miso paste
- Dry white wine
- Heavy cream
- Finely grated Parmigiano-Reggiano cheese
- Fresh herbs
Directions
- Add the stock and mushrooms to a skillet and simmer
- Heat the oil in a pressure cooking and add the mushrooms, salt, and pepper. Cook until mushrooms are brown.
- Add the onion, garlic, and porcini and stir. Allow it to cook for about four minutes
- Add the rice and cook until soft.
- Add the soy sauce and miso paste. Stir to make sure everything is evenly coated.
- Add the wine and cook until the smell of alcohol is gone, and the liquid has evaporated.
- Pour the chicken stock into the pot with the mushrooms and cook on low pressure for five minutes.
- Stir the rice until it becomes creamy. Add the cream, cheese, and herbs until it thickens.
- Season with salt and pepper and sprinkle with cheese before serving.
