3. Easy Zucchini Alfredo
If you are looking to stave off your cravings for a decadent pasta dish, this creamy, cheesy, and low carb alfredo dish is just what you need. Here is what you need: A pound of zucchini
A tbsp of olive oil
One and a half ounces of cream cheese at room temperature
A tbsp of low-fat sour cream
¼ of a cup of grated parmesan cheese
To make:
Use a vegetable peeler or a spiralizer to make noodles from the zucchini. Heat the olive oil in a large pan over medium heat. Add the zucchini noodles to the pan and saute for about five minutes. Remove the noodles and place them in a serving dish. Add the cream cheese, parmesan, and the sour cream to the pan. Stir to combine. Pour the sauce over the noodles and stir to combine. Top with some extra parmesan cheese if desired.
