4. Low Carb Carbonara
What you need:
3 zucchini, cleaned and prepped
3 cloves diced garlic
4 slices of bacon
2 eggs
2 tbsp of vinegar
A pot of boiling water
A tbsp of heavy cream
⅓ cup of shredded parmesan, this can be omitted if you are keeping to a strict paleo diet
To make:
In a large pan, render the fat from the bacon. Cook on low and flip when browned. Take it slow so that you get the most fat possible and bacon that is perfectly crunchy. When the bacon is crispy, remove from the pan and set aside. Add the garlic to the pan and let it brown, about five minutes.
Spiralize the zucchini and add it to the pan with the garlic and bacon grease. Cook until browned and most of the liquid has been drained. Drain off any excess liquid. Add in the cream and cheese, stir frequently. Crumble the bacon and stir into the noodles. Remove from the stove when the sauce thickens. Add in some poached eggs, serve.
