5. Scallops and prawn risotto

Serves: 2 – 4
Risotto, but really quite special. This dish is the perfect accompaniment to a romantic night in. Why not serve with a bottle (or two) of your favorite dry white wine. The perfect compliment.
Ingredients:
- 50g butter
- 1 large diced onion
- 3 crushed garlic cloves
- 300g risotto rice
- Fish stock
- Tablespoon olive oil
- 20 scallops
- 20 raw prawns
- Lemon zest
- Salt and pepper to taste
Method:
- Sweat the onion and garlic together in a pan, melting in the butter.
- Pour in the risotto rice and spoon in some the stock straight after. Simmer briefly.
- Make sure the rice is kept on the turn, whilst the rest of the stock is added gradually.
- Cook the seafood separately whilst the risotto simmers, adding seasoning to taste.
- Just a few moments before serving, add the two components together for a delicious seafood risotto.
