3. Butter Soy Garlic Gravy
This particular gravy is a staple at Japanese restaurants, most often you can find it poured over fried oysters but that’s not the only place you can enjoy it–paired with tempura, katsu, or hamburger steak, it’s addictively flavorful and smooth. You should take care that you don’t burn the garlic, but you do want it to take on a hint of roasted flavor, so watch your pan carefully.
Ingredients
- 1 tablespoon garlic, minced
- 2 tablespoons butter
- 1 tablespoon scallions, minced
- 3 tablespoons soy sauce
- 4 tablespoons sake
- 1 tablespoon lemon juice
- Pinch of lemon zest
- 1/4 cup water
- Salt and pepper to taste
- 1 teaspoon corn starch or flour, plus one tablespoon water
1. In a pan over medium-high heat, saute garlic and scallions in butter until fragrant and starting to caramelize.
2. Add sake to deglaze the pan.
3. Add soy sauce, lemon juice, lemon zest, water, and salt and pepper to taste. Bring to a gentle boil.
4. Combine corn starch or flour with 1 tablespoon water, and add slurry to the pan. Heat until the desired thickness has been reached.
