3. Mashed Potato Balls
Sometimes you want to mix things up and try something new. If you love mashed potatoes and want to keep potatoes as a side, these mashed potato balls are a nice alternative. They are great as a side dish or even an appetizer. You can also freeze them to keep on hand as a snack. They are easy, and you can make them quick.
Ingredients
- mashed potatoes
- sliced bacon
- shredded cheddar cheese
- thinly sliced chives
- garlic powder
- Kosher salt
- freshly ground black pepper
- eggs
- panko bread crumbs
Directions
- Combine the potatoes with the bacon, cheese, chives, and spices. Stir until they are blended together.
- Roll the potato mixture into balls and dip in the beaten eggs.
- Roll the balls into the panko bread crumb to cover them thoroughly.
- Heat oil in a skillet and add the balls to it a little at a time. Allow them to brown on one side and then flip them to the other side. Remove them and allow them to rest on paper towels.
- Add some salt and serve with sour cream or any dip of your choice.
