4. Stuffed Sopapillas
Sopapillas can be very versatile. This recipe allows you to make crispy sopapillas that can be stuffed with savory items and served as lunch or dinner, or stuffed with sweet items and served as a dessert. You can even split up the recipe so you can use the dough to make both types.
Ingredients
- Water
- Yeast
- Eggs
- Butter
- Milk
- Sugar
- Salt
- Cornmeal
- Flour
Directions
- In a bowl of water, dissolve the yeast.
- Turn a burner on and heat some oil.
- Combine all the ingredients except the flour.
- Add the flour and let the mixture rise for an hour.
- Add more flour until it becomes a soft and sticky dough
- Roll out the dough on a floured surface.
- Cut it into triangles and let them rise for a half-hour.
- Fry the triangles in hot oil until they become golden brown.
- Cut open one side of the triangle and stuff with your favorite taco toppings.
- You can also fill them with maple frosting or honey for a dessert.
