INGREDIENTS
4-boneless skinless chicken breasts.
1-cup soy sauce.
½-cup purified water.
½-cup raw honey.
2-teaspoons minced garlic.
½-cup rice vinegar.
½-teaspoon ground ginger.
½-teaspoon crushed red pepper flakes.
3-tablespoons corn starch.
2-teaspoons sesame seeds.
Diced green onions – for garnish.
1-cup cooked white rice for serving.
METHOD
Add the chicken to the Instant Pot. In a medium-size mixing bowl, add the honey, water, garlic, soy sauce, and rice vinegar, along with the pepper flakes and ginger – whisk to combine.
Pour the mixture over the chicken and seal the Instant Pot. Close the steam valve and press “pressure cook,” set the timer for 30-minutes. Release the steam and remove the lid.
Transfer the chicken to a medium mixing bowl and shred using two forks. Leave the liquid in the pot, and switch the setting to “soup.” Cook the sauce with the lid off until it starts to thicken.
