5. Chicken and vegetable Pasta Salad
This is a delicious twist on a regular pasta and chicken salad. The fresh vegetables, savory meats and fresh vegetables combine to create a meal in a bowl.
1 ½ cups uncooked penne
2 tablespoons olive oil
1 cup chopped red onion
1 cup chopped broccoli
¾ cup chopped carrots
2 garlic cloves, minced
2 tablespoons fresh parsley
1 teaspoon poultry seasoning
1/2 teaspoon pepper
1 cup mushrooms
1 cup peas
2 cups chicken cubes
1 ½ cup vegetable broth
1 10 ounce can of cream of mushroom soup
¾ cup of plain yogurt
3 tablespoons of cream cheese
Cook pasta and drain. In pot, add oil and saute onions. Add broccoli and carrots until tender. Add garlic, parsley and seasonings. Add peas. Add yogurt, cream cheese, broth, soup and chicken. Boil and reduce to a simmer for 10 minutes. Add pasta.
