6. Savory Creamed Spinach
Spinach is filled with vitamins and minerals and is easy to prepare. If you prefer to use fresh spinach, put it in a steamer before making this dish or saute it with butter thoroughly. Fresh spinach cooks up very quickly, so purchase a large bag of it and wash completely before cooking. This dish and an excellent way to get your kids to eat vegetables. The croutons add a crunchy appeal.
½ cup butter
1 small onion chopped
2 10 ounce packages spinach thawed and with excess water squeezed out
1 10 ounce can of cream of mushroom soup
1 ½ cup croutons
Preheat oven to 350. In a skillet, melt butter and saute onion for 5 minutes. Add spinach and soup. Put the combination in a baking dish. Top with a bit more of the butter and the croutons. Bake 35 to 40 minutes.
