5. Spicy Tzatziki

INGREDIENTS
1-cup Greek yogurt.
1-cup sliced pickled jalapenos.
2-cloves minced garlic.
1-English cucumber – grated.
1-tablespoon mayonnaise.
1-teaspoon extra-virgin olive oil.
1-teaspoon pure lemon juice.
1-teaspoon dry mint.
½-teaspoon crushed Himalayan pink salt.
½-teaspoon cracked black pepper.
½-teaspoon smoked paprika.
METHOD
Peel the cucumber and slice into thin strips, removing and discarding the seeds. Wring the cucumber to remove the added moisture and pat dry with paper towels – set aside.
In a medium-size mixing bowl, add the olive oil, lemon juice, and a heaped teaspoon of mayonnaise – whisk to combine. Fold in the yogurt, and stir in the cucumber.
Add the chilies, mint, and the garlic – stir to combine. Toss in the smoked paprika and mix well. Season with salt and pepper and stir in the cucumber. Place the tzatziki in the fridge for one hour to set up. Serve with pitas on the side.
