4. Spicy Shrimp with Feta, Ouzo, and Cilantro
Here’s another spicy shrimp recipe that makes for a classic Greek-style lunch. The addition of cilantro and spicy peppers add extra flavor to the dish.
INGREDIENTS
16-large shrimp, peeled and deveined.
1/3-cup orzo.
3-tablespoon extra-virgin olive oil.
½-cup red onion, chopped.
1-chili pepper, seeded and chopped.
2-cloves minced garlic.
½- cup canned chopped plum tomatoes.
1-teaspoon lemon zest.
1-cup feta cheese, crumbled.
1-tablespoon ouzo.
3-tablespoons chopped cilantro.
Crushed Himalayan pink salt and freshly cracked black pepper to taste.
METHOD
Place a skillet over medium heat, add the onions, garlic, and chili pepper and cook for a few minutes until soft. Add the shrimp and cook for a minute to turn light pink. Add the tomatoes and the feta, stir till combined. Add the ouzo and the lemon zest simmer until the alcohol gasses off.
Place a large saucepan over high heat and bring 4-cups of water to the boil. Add the pasta and reduce the heat. Leave the pasta to simmer for 12-minutes until cooked.
Place the pasta on a plate, top with the shrimp, tomato, and feta. Season with salt and pepper. Garnish with fresh cracked black pepper and fresh chopped cilantro.
